Once the fermentation is completed, part of the wines is placed in vats to continue to mature and reveal the purity of the fruit.

Depending on the desired profiles, another part of the wines is placed in casks, demi-muid barrels or oak tuns from the best French cask makers. We determine the type of containers, grains and heating according to the vintages, appellations, structure, varietals, length of maturation…

There is no predetermined recipe: this privileged permeable space must enable the wine to open out, develop complex aromas, and gain suppleness and unctuosity, while preserving the freshness and elegance that are essential to the balance of the final assembly.
